Service Description

Cook classic Scottish dishes in a friendly, hands-on class with Ailsa. You’ll prepare Cullen Skink, Scotland’s famous smoked haddock soup, and bake buttery traditional shortbread, while learning the stories and history behind these much-loved recipes. You’ll also enjoy a curated Scottish cheese tasting, before sitting down together to enjoy everything you’ve prepared. What You’ll Do - Cook Cullen Skink, a traditional Scottish smoked haddock soup - Bake classic Scottish shortbread using time-honoured techniques - Enjoy a Scottish cheese tasting, featuring 2–3 regional cheeses served with oatcakes - Learn the history and stories behind these iconic dishes - Sit down to enjoy your creations at the end of the class - Take home printed recipes to recreate the dishes yourself Who This Experience Is For - Beginners and seasoned cooks alike - Couples, solo travellers, and small groups What’s Included - All ingredients and cooking equipment - Sit-down meal featuring the dishes you prepare - Cheese tasting - Tea and coffee - Recipe cards Additional Information BYOB: This class is BYOB, so you’re very welcome to bring along drinks to enjoy during the session. We’ll sit down together at the end to enjoy the food we’ve prepared. Suitability: This class is suitable for all levels of cooking experience. Dietary Requirements: This class can be made suitable for vegetarians. If you have other dietary requirements, please email eatingwithailsa@gmail.com before booking. All dietary requirements must be stated at the time of booking so the correct ingredients can be purchased. Working in Pairs: You’ll be working in pairs during the class. If you’re booking on your own, don’t worry — you’ll be paired up on the day. Minimum Numbers: A minimum of 4 participants is required for the class to run. If we need to cancel or amend the session due to low numbers, you will be informed in advance and offered a full refund. Location & Community Support: All classes take place at Cyrenians Flavour and Haver Cook School in Leith. 10% of all proceeds go towards supporting the work of the Cyrenians.
