This is not actually my cookbook. Most of mine are in storage at the moment so I was delighted to have a rifle through my friend’s selection instead. The recipes throughout this book are all vegan and relatively simple. There are no long ingredient lists and most of the recipes look like they could easily be made in under an hour so it would be a great book for someone looking to add some more quick and delicious veg into their life!
Favourite recipe: Pea Speltotto - favourite is a bit of a stretch as I have only made a handful of things from this book, but I can definitely recommend this recipe.
Best for beginners: Lemony Samphire - Salty samphire with sweet petit pois and citrusy lemon = winning combo.
I’m looking forward to trying: Sweet Potato, Pineapple and Red Pepper Pot - this is not a combination that I would think to put together so I am intrigued and plan to give this a go soon!
